A recipe to prepare without haste, enjoying every step, choosing your favorite music, and letting your kitchen fill with delicious aromas.

Rossini Cannelloni
Ingredients (4 servings):
- 12 cannelloni sheets
- 300 g minced meat (beef and pork mix)
- 50 g foie gras or pâté
- 1 black truffle (optional)
- 1 large onion
- 2 cloves of garlic
- 1 large ripe tomato (or 2 small ones)
- 1 small glass of dry white wine
- Salt, black pepper, and nutmeg to taste
- 500 ml homemade béchamel (butter, flour, and milk)
- 100 g grated Parmesan cheese
- Extra virgin olive oil
Preparation:
For the Filling:
- In a large pan, sauté the chopped onion and garlic with a drizzle of olive oil. Cook gently until softened.
- Add the minced meat, stirring to break it up. Let it cook until lightly browned.
- Incorporate the grated tomato and reduce for a few minutes. Add the white wine and allow the alcohol to evaporate.
- Mix in the foie gras or pâté, and if using, grate in some black truffle for a sophisticated touch. Season with salt and pepper and let the mixture cool.
For the Pasta:
- Cook the cannelloni sheets according to the package instructions, drain, and lay them on a clean cloth.
Assembly:
- Fill each sheet of cannelloni with a generous spoonful of the filling. Roll carefully and place in a lightly greased baking dish.
For the Béchamel:
- Melt 50 g of butter, add 50 g of flour, and cook for a few minutes to remove the raw taste. Gradually add 500 ml of milk while stirring until smooth and creamy. Season with salt, nutmeg, and pepper to taste.
To Bake:
- Cover the cannelloni with the béchamel sauce, ensuring they are well coated. Sprinkle with grated Parmesan cheese.
- Bake in a preheated oven at 180 °C for 20 minutes, or until the surface is golden and crispy.
Final Touch:
- If you like, add a little more grated truffle after removing the dish from the oven.
