Ingredients
- 1 Butifarra de Huevo (Butifarra d’ou)
- 5 eggs

- Sear Butifarra de Huevo: Cut the Butifarra de Huevo into thin slices and brown them in a pan with a drizzle of olive oil. It’s important that they become crispy but not burnt to add texture to the omelet.

- Add the Butifarra de Huevo: Mix the browned egg sausage slices into the beaten eggs.
- Cook the tortilla: In the same pan, add a bit more oil and pour in the mixture. Cook over medium heat until the base is set. Then, using a plate, flip the omelet and let it cook on the other side until you achieve the desired texture.
